This is a twist on a recipe that my mom has always made. We call them chicken roll-ups. It's basically chicken, mixed with cream of celery soup, shredded sharp cheddar cheese, a little milk, all mixed up, rolled into pillsbury crescent rolls, and baked in the oven for about 30 min. Well, as you can see, there's no chicken in this recipe. I derived this idea from a favorite recipe I found in Southern Living Magazine a few years ago. It's call King Ranch Chicken. Anyway, the recipe is as follows:
1 lb. ground chuck 1 sm. bell pepper 1 sm. sweet onion sharp shredded cheddar cheese 1 can rotel tomatoes 1 can cream of celery soup 1 can cream of chicken soup 1 or 2 cans Pillsbury Crescent Rolls (depending on how many appetites you have to feed) First , coarsly chop bell pepper and onion, saute in pan with a little butter, add ground chuck, cook thouroughly, at the end, add can of rotel tomatoes (juice and all). Drain meat, then prepare can of celery soup,can of chicken soup, however much cheese you like, mix together, with meat, this makes the filling.Fill each crescent roll with filling, roll up, and bake for at 350 for 30 min. I alo sprinkle a little cheese on top.. Comes out golden and bubbly! Enjoy!!!
